In this step-by-step tutorial, I’ll show you how to decorate an easy Easter cookie platter with royal icing featuring marshmallow-inspired chicks and bunnies arranged around a center message cookie that reads “Happy Easter Peeps.” This playful design is great for Easter gatherings, pre-sale boxes, or gift platters, and it comes together beautifully using our coordinating cookie cutter set and stencil, both available on my website to help make decorating even easier.

Easter Marshmallow Platter Cookie Cutter Set
New to the shop is this Easter Marshmallow platter cookie cutter set. This set includes 3 cookie cutters: a bunny cutter, a chick cutter, and a center circle. You can purchase all cookie cutters together, or as a 2-piece without the circle cutter.
(This is the same circle cutter used in all my platter sets, like this Bunny & Carrot Cookie Platter, Bunny and Chick Cocoa Platter, and Egg Wreath Cookie Platter, etc.)
There are two sizes available. When arranged as a platter, as shown in the example picture, the platter measures:
LARGE- 12 inches in diameter.
SMALL- 9 inches in diameter.
For this tutorial, I'll be decorating the LARGE size.

Templates for the Easter Marshmallow Cookie Platter

If you have a Kopykake or Pico projector, just print it out (or pull it up on your mobile device) and you are good to go. For those without a projector, follow the suggested steps below by tracing the design onto the cookie with an edible food marker.
The Cookie Decorating Process
To decorate these cookies, my icing of choice is royal icing. Here's how to make royal icing for cookie decorating.
For the colors used for these Christmas cookies, you will need the following suggested colors:
- Pink icing (I used Americolor Deep Pink.)
- White icing. (I used Americolor Bright White.)
- Yellow icing (I used Americolor Lemon Yellow.)
- Purple icing (I used Americolor Regal Purple.)
- Green icing (I mixed Americolor Electric Green with Americolor Mint Green.)
- Blue icing (I mixed Americolor Sky Blue with Americolor Teal.)
- Dark Brown icing (I mixed Americolor Chocolate Brown with Americolor Super Black.)
Step 1
These cookies are a simple design, but they have key parts that need to be outlined appropriately. For the bunny, outline the ears, but add a double outline (or thick outline) where the ears meet in the middle deep "V". This will help make the ears more defined.
For the chick, outline the belly fold as shown, but add a double outline (or thick outline) at the bottom. This will help make the belly look puffy and prevent the flood icing from flooding over the line.

Step 2
Next, flood the entire cookie with flood icing. Be careful not to fill or spill the icing over the outlines we made in the first step. This will give the cookies puffy dimension between the bunny's ears and the chick's belly.

Step 3
Lastly, with dark brown icing, add the chick's eye...

And the bunny's eyes and nose.

Step 4
For the final, center message cookie, begin by flooding the entire cookie with purple icing. Let this icing dry completely.
Then I used the Happy Easter Peeps cookie stencil with super thick white icing. I used a Stencil Genie to hold the stencil in place while I swiped icing over the design.

Here's the final Easter marshmallow cookie platter all assembled. To create this entire platter required 11 cookies-- 5 bunny cookies, 5 chick cookies, and 1 center circle cookie.
This is the large, 12" version. For the tray it's on, I like to use the 12" pizza pans from Dollar Tree. They are cheap and sturdy for transporting around.
